Ingredients
Dry Ingredients
2¼ cups (280 g) all-purpose flour
½ cup (45 g) unsweetened cocoa powder
1 tsp baking soda
½ tsp baking powder
½ tsp saltWet Ingredients
1 cup (227 g) unsalted butter, softened
1 cup (200 g) light brown sugar
½ cup (100 g) granulated sugar
2 large eggs, room temperature
2 tsp vanilla extractCrunch Mix-ins
1 cup (30 g) crispy rice cereal
¾ cup (130 g) semi-sweet chocolate chips
½ cup (90 g) milk chocolate chunks
½ cup (70 g) chopped toasted almonds or hazelnuts (optional)
Directions
- Mix Dry Ingredients
In a bowl, whisk together:
Flour
Cocoa powder
Baking soda
Baking powder
Salt
Set aside.
- Cream Butter and Sugars
Using a mixer, beat the butter for 1 minute until smooth.
Add the brown sugar and granulated sugar, then beat for 3–4 minutes until light and fluffy.
- Add Eggs
Beat in the eggs one at a time.
Mix in the vanilla extract until fully combined.
- Combine
Gradually add the dry ingredients to the wet mixture.
Mix on low speed until just combined.
- Fold in the Crunch
Using a spatula, gently fold in:
Crispy rice cereal
Chocolate chips
Chocolate chunks
Toasted nuts (if using)
Avoid overmixing to keep the cereal crisp.
- Chill & Shape
Cover the dough and refrigerate for 30 minutes.
This helps the cookies hold their shape while baking.
Scoop about 60 g of dough for each cookie.
Place them 2 inches (5 cm) apart on the prepared baking trays.
Press a few extra chocolate chunks on top for a bakery-style finish. - Bake
Bake for 10–12 minutes, or until the edges are set and the centers are still slightly soft.
The cookies will continue to cook as they cool.
Notes
- Chill the dough to prevent spreading.
Do not overbake; slightly soft centers will become chewy as they cool.
Fold the crispy rice cereal in gently to preserve its crunch.
Sprinkle a pinch of flaky sea salt on top before baking for a richer chocolate flavor.
For extra crunch, add chopped toasted almonds, hazelnuts, or pecans.
