2 tsp baking powder
¼ tsp salt
170 g unsalted butter
180 g sugar
3 eggs
1 tsp vanilla
120 ml milk

250 g white chocolate
300 ml whipping cream
200 ml whipped cream (soft peaks)
120 g pistachio paste
5 g gelatin powder
30 ml cold water

Ingredients
120 g sugar
80 g roasted pistachios
80 g chopped roasted pistachios
70 g white chocolate
30 g feuilletine flakes (or crushed wafer biscuits)
Pinch sea salt4. White Chocolate Ganache Base
Ingredients
180 g white chocolate
60 ml heavy cream5. Pistachio Ganache Coating
Ingredients
250 g white chocolate
120 ml heavy cream
80 g pistachio paste
Green coloring (optional)
Directions
- Pistachio Sponge Cake
Preheat oven to 170°C (340°F).
Cream butter and sugar until fluffy.
Beat in eggs one at a time.
Add vanilla.
Mix flour, pistachio powder, baking powder, and salt.
Alternate adding dry ingredients and milk.
Fold gently.
Divide into two 7-inch cake pans.
Bake for 22–25 minutes.
Cool completely.
- Pistachio Mousse
Bloom gelatin in water.
Heat cream until steaming.
Pour over white chocolate.
Stir smooth.
Add pistachio paste.
Melt gelatin and mix in.
Cool to room temperature.
Fold in whipped cream.
Keep refrigerated until needed.
- Pistachio Praline Crunch
Make a golden caramel.
Coat whole pistachios.
Cool completely.
Crush into coarse praline pieces.
Mix praline with white chocolate and feuilletine.
Spread into a thin disc.
Chill.
- White Chocolate Ganache Base
Heat cream.
Pour over chocolate.
Stir smooth.
Let cool slightly.
- Pistachio Ganache Coating
Heat cream.
Pour over white chocolate.
Mix until smooth.
Stir in pistachio paste.
Cool until spreadable.
Notes
- Use 100% pure pistachio paste for the best flavor and natural green color.
Chill each layer briefly before adding the next to keep the cake stable.
Toast the pistachios lightly before making the praline to enhance their aroma and crunch.
For clean slices like the one shown, warm a sharp knife in hot water, wipe it dry, and clean it between each cut.
