Ingredients
Biscuit Base
120 g digestive biscuits
50 g melted butterCheesecake Filling
250 g cream cheese, softened
100 ml whipping cream
60 g icing sugar
1 tsp vanilla extract
1 tbsp lemon juice
5 g gelatin
25 ml cold waterColored Mirror Glaze
150 g white chocolate
100 g sugar
100 g glucose syrup
50 ml water
100 g sweetened condensed milk
6 g powdered gelatin
30 ml cold water
Pink or pistachio-green gel/oil-based food coloring
Directions
- For Biscuit Base
Crush the biscuits into fine crumbs.
Mix with melted butter.
Press the mixture firmly into the bottom of a small triangular or wedge-shaped mold.
Refrigerate while preparing the cheesecake filling.
- For Cheesecake Filling
Sprinkle gelatin over cold water and allow it to bloom for 5 minutes.
Gently melt the bloomed gelatin.
Beat cream cheese, icing sugar, vanilla and lemon juice until completely smooth.
Whip the cold cream separately until soft peaks form.
Fold the whipped cream into the cream cheese mixture.
Add the melted gelatin and mix gently.
Pour the cheesecake mixture into the cheese-wedge silicone molds.
- Create the Cheese Holes
For the round holes seen on the outside of the cake, use a small round silicone mold or make small spherical indentations in the mousse.
An easy method is to pipe small amounts of cheesecake mousse into a few small half-sphere molds, freeze them, and place the frozen spheres against the inside of the main wedge mold before adding the remaining mousse. Once unmolded, they create the characteristic round cheese holes.
Freeze the filled molds for at least 5 hours, preferably overnight.
- For Colored Mirror Glaze
Bloom gelatin in cold water for 5 minutes.
Heat sugar, glucose and water until the sugar dissolves.
Remove from heat and add condensed milk.
Pour the hot mixture over white chocolate.
Add bloomed gelatin and blend with an immersion blender.
Add your chosen coloring.
Blend carefully, keeping the blender submerged to avoid bubbles.
Cool the glaze to approximately 32–35°C (90–95°F) before pouring. - Glaze the Cheesecake
Remove the frozen cheesecake wedges from their molds and place them on a wire rack.
Pour the pink or pistachio-green mirror glaze over each frozen cake in one smooth motion, allowing the excess to drip away.
Carefully transfer each cake onto a small gold cake board.
- Final Decoration
For the adorable finish shown in your picture:
Use tiny fondant or chocolate cat figures on top.
Add small edible facial details with melted chocolate.
Make the cheese holes slightly darker or lighter than the glaze.
Place the finished cheesecake on a gold cardboard base.
Notes
- Keep the finished cheesecakes refrigerated for 2–3 hours after glazing before serving. The cheesecake will become creamy and smooth while the mirror glaze remains glossy. For the closest match to your photograph, make half the cakes pastel pink and half pistachio green, and use a sharp triangular silicone mold for the cheese-wedge shape.
