Ingredients
Biscuit Base
250 g digestive biscuits, crushed
100 g unsalted butter, melted
2 tbsp brown sugar (optional)Cheesecake Filling
600 g full-fat cream cheese, softened
200 g sour cream
150 g caster sugar
3 large eggs
1 tsp vanilla extract
1 tbsp corn flour
1 tbsp lemon juice
1 tsp lemon zestBlueberry Topping
300 g fresh or frozen blueberries
70 g sugar
1 tbsp lemon juice
1 tbsp corn flour mixed with 2 tbsp water
1 tsp vanilla extract
Directions
- Prepare the Base
Preheat the oven to 160°C (320°F). Combine the crushed digestive biscuits, melted butter, and brown sugar until the crumbs resemble wet sand. Press the mixture firmly into the bottom of a 9-inch springform pan and slightly up the sides. Refrigerate for 15 minutes, then bake for 10 minutes. Allow the crust to cool completely.
- Make the Filling
Beat the softened cream cheese until smooth and creamy. Add the sugar and mix until well combined. Beat in the sour cream, vanilla extract, lemon juice, lemon zest, and cornflour. Add the eggs one at a time, mixing gently after each addition without overbeating to prevent cracks.
- Bake
Pour the filling over the cooled crust and smooth the top. Place the cheesecake in a larger roasting pan and pour hot water into the outer pan to create a water bath. Bake for 55–60 minutes, until the edges are set but the center still has a slight wobble. Turn off the oven, leave the door slightly open, and let the cheesecake cool inside for one hour. Refrigerate for at least 6 hours or overnight.
- Prepare the Blueberry Topping
Combine the blueberries, sugar, lemon juice, and vanilla in a saucepan over medium heat. Cook until the berries begin to burst. Stir in the corn flour slurry and cook for another 2–3 minutes until thick and glossy. Cool completely before spreading over the chilled cheesecake.
- Decorate and Serve
Spread the blueberry topping evenly over the cheesecake. Garnish with fresh blueberries, whipped cream, mint leaves, and a little lemon zest if desired. Slice with a warm knife for neat, clean pieces.

- Tips & Notes
Use room-temperature cream cheese to achieve a smooth, lump-free filling. Avoid overmixing the batter after adding the eggs, as this can cause cracks during baking. Bake the cheesecake in a water bath and allow it to cool gradually for the best texture. Chill it for at least 6–8 hours, preferably overnight, before serving. Let the blueberry topping cool completely before spreading it over the cheesecake, and use a warm knife for clean, professional-looking slices.
