Ingredients
For the Biscuit Base
250 g digestive biscuits or graham crackers
100 g unsalted butter, melted
2 tbsp sugarFor the Blueberry Compote
2 cups fresh blueberries
¼ cup sugar
1 tbsp lemon juice
1 tsp cornstarch
2 tbsp waterFor the Ice Cream Layer
1 litre blueberry ice cream, slightly softened
1 cup whipped cream
1 cup fresh blueberries
1 tsp vanilla extractDecoration
Whipped cream
Fresh blueberries
White chocolate curls
Mint leaves
Directions
- Prepare the Base
Crush the biscuits into fine crumbs.
Mix with melted butter and sugar.
Press firmly into the bottom of an 8-inch springform pan.
Freeze for 20–30 minutes until firm.
- Make the Blueberry Compote
Combine blueberries, sugar, and lemon juice in a saucepan.
Cook over medium heat until the berries soften.
Stir the cornstarch with water and add it to the berries.
Cook for 2–3 minutes until thickened.
Cool completely before using.
- Prepare the Ice Cream Filling
Let the blueberry ice cream soften slightly.
Fold in the whipped cream, vanilla, and fresh blueberries.
Spread half of the mixture over the chilled crust.
Spoon half of the blueberry compote over the ice cream and gently swirl.
Add the remaining ice cream mixture and smooth the top.
Finish with the remaining blueberry compote.
- Freeze
Cover and freeze for at least 8 hours or overnight until completely firm.
- Decorate
Before serving, top with whipped cream, fresh blueberries, white chocolate curls, and mint leaves. Let the cake stand at room temperature for 5–10 minutes before slicing.

- Use premium blueberry ice cream for the creamiest texture.
Chill the serving knife in hot water for clean slices.
Make the cake a day ahead for the best results.
Fresh blueberries give the best flavor, but frozen berries work well for the compote.
