Ingredients
For the Coffee Syrup
1 cup strong brewed espresso or coffee
2 tbsp sugar
1 tsp vanilla extractFor the Cake
250–300 g ladyfinger biscuits
500 g mascarpone cheese
400 ml heavy whipping cream
100 g powdered sugar
1 tsp vanilla extract
1 tbsp coffee powder
100 g dark chocolate, finely choppedFor Decoration
Unsweetened cocoa powder
Chocolate curls
Chocolate-covered coffee beans, optional
Whipped cream, optional
Directions
- Prepare the Coffee Syrup
Mix the hot coffee with sugar until dissolved. Add vanilla and allow it to cool completely.
- Make the Mascarpone Ice Cream
Beat the mascarpone with powdered sugar and vanilla until smooth.
In a separate bowl, whip the cold heavy cream until soft-to-stiff peaks form. Gently fold the whipped cream into the mascarpone mixture.
Dissolve the coffee powder in 1 tablespoon of warm water, let it cool, and fold it into the mascarpone mixture.
- Assemble the First Layer
Line an 8-inch springform pan with parchment paper.
Quickly dip each ladyfinger into the cooled coffee syrup. Don’t soak them for too long or they will become mushy.
Arrange the soaked ladyfingers tightly across the bottom of the pan.
- Add the Ice Cream Layer
Spread half of the mascarpone mixture over the ladyfingers. Sprinkle half of the chopped dark chocolate over the top.
Add another layer of coffee-dipped ladyfingers, followed by the remaining mascarpone mixture.
Smooth the surface with a spatula.
- Freeze
Cover the cake tightly and freeze for 6–8 hours, preferably overnight, until completely firm. - Decorate and Serve
Remove the cake from the freezer and let it sit at room temperature for 5–10 minutes.
Dust generously with unsweetened cocoa powder and decorate with chocolate curls or chocolate-covered coffee beans.
Notes
- Use strong espresso for a rich coffee flavor.
Dip the ladyfingers very quickly so they don’t become soggy.
Freeze overnight for clean, beautiful slices.
Dust with cocoa just before serving for the best appearance.
For an extra indulgent version, add a thin layer of chocolate ganache between the mascarpone layers.
