4 large eggs (room temperature)
100 g (½ cup) granulated sugar
1 tsp vanilla extract
100 g (¾ cup) cake flour
1 tsp baking powder
¼ tsp salt
30 ml (2 tbsp) milk
30 g (2 tbsp) melted unsalted butterFilling
250 ml (1 cup) heavy whipping cream
2 tbsp powdered sugar
1 tsp vanilla extract
Optional: Fresh strawberries or raspberries
Berry jamDecoration
500–700 g white or blush pink fondant
Fresh food-safe roses
Baby’s breath (Gypsophila)
Edible sugar pearls
Edible glitter (optional)
Directions
- Prepare the Sponge
Preheat the oven to 180°C (350°F).
Line a 10×15-inch jelly roll pan with parchment paper.
Beat eggs and sugar for 6–8 minutes until thick, pale, and tripled in volume.
Mix in vanilla.
Sift together flour, baking powder, and salt.
Fold the dry ingredients gently into the egg mixture.
Fold in milk mixed with melted butter.
Spread evenly in the prepared pan.
Bake for 10–12 minutes, until lightly golden and springy.
- Roll the Cake
Turn the warm cake onto a clean towel dusted with powdered sugar.
Remove the parchment paper.
Roll the cake with the towel while still warm.
Let cool completely.
- Make the Filling
Beat chilled whipping cream, powdered sugar, and vanilla until stiff peaks form.
Unroll the cooled sponge.
Spread whipped cream evenly.
Add berries or a thin layer of jam if desired.
Roll tightly again.
Refrigerate for 1 hour. - Cover with Fondant
Lightly coat the chilled roll with a thin layer of buttercream or ganache.
Roll out fondant to about 3 mm thick.
Carefully drape it over the cake.
Smooth with fondant smoothers.
Trim the excess. - Decorate
Arrange fresh food-safe roses on one corner.
Add sprigs of baby’s breath around the roses.
Scatter edible pearls across the cake.
Finish with a touch of edible shimmer if desired.
