Biscuit Base
250 g digestive biscuits or graham crackers, finely crushed

250 g fresh mango puree
1 tsp vanilla extract
2 tsp lemon juice
10 g powdered gelatin (or 2 tsp agar-agar for a vegetarian version)

2 tbsp sugar (adjust to taste)
1 tsp lemon juice
1 tsp gelatin dissolved in 2 tbsp warm water (optional, for a firmer glaze)Decoration

Directions
- Prepare the Base
Combine the crushed biscuits with the melted butter.
Mix until the crumbs resemble wet sand.
Press the mixture firmly into the bottom of an 8-inch (20 cm) springform pan.
Refrigerate for 30 minutes until firm.
- Prepare the Filling
Beat the softened cream cheese until smooth and creamy.
Add the powdered sugar and mix well.
Stir in the vanilla extract, lemon juice, and mango puree.
Dissolve the gelatin in warm water and let it cool slightly before mixing it into the cheesecake mixture.
In another bowl, whip the heavy cream to medium-stiff peaks.
Gently fold the whipped cream into the mango mixture until smooth and airy.
- Assemble the Cheesecake
Pour the filling over the chilled biscuit crust.
Smooth the surface with an offset spatula.
Refrigerate for at least 4 hours until mostly set.
- Prepare the Mango Glaze
Mix the mango puree, sugar, and lemon juice.
Add the dissolved gelatin if using.
Pour the glaze gently over the chilled cheesecake.
Refrigerate for another 2–4 hours or overnight until completely set.
- Decorate
Carefully remove the cheesecake from the springform pan.
Pipe whipped cream around the edges.
Arrange fresh mango cubes, mango slices, or mango roses on top.
Garnish with mint leaves and white chocolate curls for an elegant finish

- Serve
Slice the cheesecake using a sharp knife dipped in hot water and wiped clean between each cut. Serve chilled for the best creamy texture and fresh mango flavor.
