250 g digestive biscuits or graham crackers, crushed
100 g unsalted butter, melted
2 tbsp sugar (optional)

700 g cream cheese, softened
200 ml sour cream
150 g granulated sugar
3 large eggs
120 g pistachio paste
80 g finely ground roasted pistachios
1 tsp vanilla extract
1 tbsp cornstarch

60 ml heavy cream
2 tbsp pistachio pasteDecoration

Directions
- Prepare the Crust
Preheat the oven to 160°C (320°F).
Mix crushed biscuits, melted butter, sugar, and salt.
Press firmly into the bottom of an 8-inch (20 cm) springform pan.
Bake for 10 minutes, then allow it to cool completely.
- Make the Cheesecake Filling
Beat the cream cheese until smooth.
Add sugar and mix until creamy.
Mix in sour cream, pistachio paste, vanilla, and salt.
Stir in the ground pistachios and cornstarch.
Add eggs one at a time, mixing gently after each addition. Avoid overmixing.
- Bake
Pour the filling over the cooled crust.
Place the pan inside a larger roasting pan and fill the outer pan with hot water halfway up the sides (water bath).
Bake for 55–65 minutes, until the edges are set and the center still has a slight wobble.
Turn off the oven, crack the oven door slightly, and let the cheesecake cool inside for 1 hour.
- Decorate
Pipe whipped cream around the edges.
Sprinkle generously with chopped roasted pistachios.
Add whole pistachios and white chocolate curls.
Finish with edible gold flakes for a luxurious presentation.
