For the Ice Cream
250 ml heavy whipping cream, chilled
200 g sweetened condensed milk
150 g Biscoff spread
1 tsp vanilla extract
8 Biscoff biscuits, crushedFor the Coating
200 g white or milk chocolate
80 g Biscoff spread
4–5 Biscoff biscuits, finely crushed
Directions
- Prepare the Ice Cream Mixture
Whip the cold heavy cream until soft peaks form. Add condensed milk, vanilla, and Biscoff spread.
Beat gently until the mixture becomes smooth and creamy.
Fold in the crushed Biscoff biscuits.
- Fill the Popsicle Molds
Pour the mixture into popsicle molds, leaving a little space at the top.
Insert popsicle sticks and freeze for 6–8 hours, preferably overnight.
- Prepare the Biscoff Coating
Melt the chocolate gently in the microwave or over a double boiler.
Stir in the Biscoff spread until smooth and completely combined. Allow the mixture to cool slightly but keep it liquid.
- Coat the Popsicles
Remove the frozen popsicles from their molds. Dip each one into the Biscoff-chocolate coating.
- Set and Serve
Place the coated popsicles on parchment paper and return them to the freezer for 10–15 minutes.
Notes
- Freeze the popsicles overnight for easier removal from the molds.
Run the outside of the molds under lukewarm water for a few seconds to release them easily.
Make sure the chocolate coating isn’t hot when dipping the popsicles.
Add extra Biscoff spread in thin swirls to the ice cream mixture for a stronger flavor.
Store the popsicles in an airtight freezer container for up to 2 weeks.
