Brownie Ingredients
150 g dark chocolate
100 g unsalted butter
150 g caster sugar
2 eggs
1 tsp vanilla extract
90 g all-purpose flour
25 g cocoa powder
¼ tsp salt
50 g chocolate chips, optionalWhite Chocolate Ganache for the Cake
Ingredients
150 g white chocolate
50 ml heavy cream
½ tsp vanilla extract
Directions
- Making Brownie
Preheat the oven to 170°C (340°F).
Melt the dark chocolate and butter together and let them cool slightly.
Whisk the eggs, sugar and vanilla for 1–2 minutes.
Add the melted chocolate mixture and mix well.
Sift in flour, cocoa powder and salt.
Fold gently until just combined. Add chocolate chips if desired.
Pour into a lined 8-inch square pan.
Bake for 20–25 minutes. Don’t overbake—the brownies should remain fudgy.
Cool completely.
- Make the Brownie Popsicle Filling
Crumble the cooled brownie very finely.
Add 2–3 tablespoons of chocolate ganache or melted chocolate and mix until you have a firm, moldable mixture.
Press the brownie mixture firmly into popsicle-shaped silicone molds. Insert wooden popsicle sticks and freeze for 30–45 minutes.
- Chocolate Coating of Popsicles
Melt the chocolates separately.
Remove the frozen brownie popsicles from their molds and dip each one into the melted chocolate. Allow the excess chocolate to drip off.
Place them on parchment paper and let the coating set.
Tip: Use oil-based or candy coloring for chocolate. Water-based coloring can make melted chocolate seize.
- Decorations
Heart Popsicle
Coat with pink chocolate and attach a large red chocolate heart with a little melted chocolate.
White Heart Popsicle
Coat with ivory/white chocolate, then pipe or attach small pink and red hearts.
Red Textured Popsicle
Coat with red chocolate. Before it sets completely, create fine horizontal lines using a fork or chocolate decorating comb. Finish with small pink and white heart sprinkles.
Love Popsicle
Coat with red chocolate and allow it to set. Pipe “love” across the front using melted white chocolate in a very small piping bag.
Notes
- Use red, blush pink and ivory-white chocolate, with different decorations on each popsicle. Add tiny heart sprinkles, chocolate hearts, and piped lettering. Refrigerate the finished brownie popsicles for 15–20 minutes before serving.
The result is a rich fudgy brownie center with a crisp chocolate shell, presented like an elegant Valentine’s Day popsicle—perfect for gifting, dessert boxes, birthdays, or romantic celebrations.
