Ingredients
For the Biscuit Base
150 g digestive biscuits
60 g melted butter
1 tbsp brown sugarFor the Cheesecake
300 g cream cheese
100 g mascarpone
80 g caster sugar
2 eggs
100 ml heavy cream
1 tsp vanilla extract
1 tbsp lemon juice
1 tsp lemon zestFor the Caramel Sauce
120 g granulated sugar
50 g butter
100 ml heavy cream
½ tsp sea salt
1 tsp vanilla extractFor the Orange Tuile
40 g melted butter
40 g icing sugar
40 g egg whites
40 g all-purpose flour
1 tsp orange zestFor Decoration
Fresh blueberries
Fresh blackberries
Mint leaves
Powdered sugar
Extra caramel sauce
Directions
- Make the Biscuit Base
Crush the digestive biscuits into fine crumbs. Mix with melted butter and brown sugar.
Press the mixture firmly into the bottom of 6 individual cake rings or mini springform molds.
Bake at 170°C (340°F) for 8–10 minutes, then allow to cool.
- Prepare the Cheesecake Filling
Beat the cream cheese, mascarpone and sugar until smooth.
Add the eggs one at a time, mixing gently after each addition. Add the cream, vanilla, lemon juice and lemon zest.
Do not overbeat the mixture, as too much air can cause cracks during baking.
Pour the filling over the cooled biscuit bases.
- Bake the Cheesecakes
Bake at 150°C (300°F) for approximately 25–30 minutes.
The edges should be set while the center still has a slight wobble.
Turn off the oven and leave the cheesecakes inside with the door slightly open for about 15 minutes.
Cool completely and refrigerate for at least 4–6 hours, preferably overnight.
- Make the Caramel Sauce
Place the sugar in a saucepan over medium heat.
Allow it to melt without stirring too much.
Once it becomes a deep golden amber color, add the butter.
Slowly pour in the warm cream while whisking.
Add salt and vanilla.
Cook for another 1–2 minutes until smooth.
Allow it to cool until slightly thickened.
Be very careful when adding the cream—the caramel will bubble vigorously.
- Make the Crispy Orange Tuile
This is the thin, golden curved decoration
Mix together the melted butter, icing sugar, egg whites, flour and orange zest until smooth.
Spread very thin circles or oval shapes on a parchment-lined baking tray.
Bake at 170°C (340°F) for about 5–7 minutes, until golden around the edges.
While still hot, carefully lift each tuile and bend it over a rolling pin or bottle to create the curved shape.
Let it cool completely—it will become crisp.
- Assemble
Place one chilled cheesecake slightly off-center on a dark plate.
Spoon a generous pool of caramel sauce beside it.
Drizzle a little caramel down the side of the cheesecake.
Arrange blueberries and blackberries on top and around the plate.
Add a small scoop or quenelle of vanilla ice cream or mascarpone cream beside the cheesecake.
Insert the crispy orange tuile vertically behind the cheesecake.
Add a few fresh mint leaves.
Finish with a very light dusting of powdered sugar.

- For the closest presentation to your reference, keep the cheesecake relatively simple and let the plating create the luxury: a smooth individual cheesecake, glossy caramel puddles, fresh blueberries + blackberries, a small vanilla cream/ice-cream quenelle, and the tall golden-orange tuile.
