50 g powdered sugar
2 egg whites
40 g all-purpose flour
15 g cocoa powder
1 tsp vanilla extract
Pinch of saltFor the Mascarpone Cream
200 g mascarpone
200 ml cold whipping cream
50 g powdered sugar
1 tsp vanilla extractFor the Fruit Filling
150 g strawberries
150 g mango
50 g blueberries, optional
1 tsp lemon juiceFor Decoration
50 g pistachios, roughly chopped
Powdered sugar
White chocolate curls, optional
Mint leaves, optional
Directions
- Make the Chocolate Shell Batter
Melt the butter and allow it to cool slightly.
Whisk the egg whites with powdered sugar until combined; don’t whip them into a meringue.
Add melted butter and vanilla.
Sift in flour, cocoa powder and salt.
Mix until you have a smooth, thin batter.
- Bake the Shells
Line a baking tray with silicone baking mat or parchment paper.
Spread the batter into thin oval or rectangular discs, approximately 12–14 cm long.
Bake at 175°C (350°F) for 5–7 minutes, until the edges are crisp.
- Shape the Chocolate Tacos
This step needs to be done immediately while the chocolate discs are hot.
Carefully lift each warm disc and fold it over a rolling pin, bottle, or taco-shaped mold.
Gently press the edges so that the shell takes a curved taco shape.
Allow it to cool completely. Once cool, it will become crisp.
Tip: Bake only 2–3 shells at a time because they harden very quickly.
- Prepare the Mascarpone Cream
Place cold whipping cream, mascarpone, powdered sugar and vanilla in a chilled bowl.
Whip until thick and smooth.
Transfer the cream to a piping bag fitted with a large star or open-star nozzle.
The cream should be firm enough to hold the beautiful ruffled swirl.
- Prepare the Fruit
Cut the strawberries and mango into attractive bite-sized pieces.
Toss very lightly with lemon juice to keep the fruit fresh and vibrant.
- Assemble the Dessert Tacos
Place the cooled chocolate shell on a serving plate.
Pipe several generous swirls of mascarpone cream inside.
Arrange sliced strawberries and mango between the cream.
Add another layer of cream on top.
Sprinkle generously with chopped pistachios.
Add a few extra pieces of fruit.
Finish with a light dusting of powdered sugar.
Notes
- Use a dark chocolate shell, pipe the mascarpone cream in large loose rosettes, and arrange strawberries and mango in separate sections rather than mixing them together. Sprinkle pistachios over the cream and fruit, with a few pieces scattered around the plate.
The result is a gorgeous combination of crisp chocolate + silky cream + juicy fruit + crunchy pistachios.
