Ingredients
Cherry Insert
200 g fresh or frozen cherries, pitted
40 g sugar
1 tbsp lemon juice
1 tsp cornstarch
1 tbsp water
2 g gelatin + 1 tbsp cold waterWhite Chocolate Mousse
200 g white chocolate
250 ml heavy cream
100 ml milk
2 egg yolks
30 g sugar
4 g gelatin + 2 tbsp cold water
1 tsp vanilla extractRed Cherry Mirror Glaze
150 g cherry purée
50 g sugar
50 g glucose syrup
100 g white chocolate
5 g gelatin
Red food colouring, optionalDecoration
Fresh cherries
Edible white flowers
Small mint leaves, optional
Directions
- Prepare the Cherry Insert
Place the cherries, sugar and lemon juice in a saucepan. Cook over medium heat until the cherries soften.
Mix the cornstarch with water and add it to the cherries. Cook for another 1–2 minutes until slightly thickened.
Soften the gelatin in cold water, then stir it into the warm cherry mixture.
Pour into small silicone molds and freeze until completely firm.
- Make the White Chocolate Mousse
Melt the white chocolate gently and set aside.
Soak the gelatin in cold water.
Heat the milk until steaming. Whisk the egg yolks and sugar together, then slowly pour in the warm milk while whisking.
Return the mixture to low heat and cook gently until it reaches approximately 82°C, without boiling.
Remove from the heat and add the softened gelatin.
Pour this mixture over the melted white chocolate and whisk until smooth. Add vanilla.
Allow it to cool slightly.
Whip the heavy cream until soft peaks form and gently fold it into the white chocolate mixture.
- Assemble the Mousse Domes
Fill the silicone dome molds about two-thirds full with white chocolate mousse.
Place one frozen cherry insert in the center of each mold.
Cover with the remaining mousse and smooth the surface.
Freeze for at least 6 hours, preferably overnight.
- Prepare the Red Mirror Glaze
Bloom the gelatin in cold water.
Heat the cherry purée, sugar and glucose syrup until hot but not boiling.
Remove from the heat and add the gelatin.
Pour the mixture over the white chocolate and blend with an immersion blender until completely smooth.
Add a tiny amount of red coloring if necessary.
Allow the glaze to cool to approximately 32–35°C before glazing.
- Glaze the Mousse
Remove the frozen mousse domes from their molds.
Place them on a wire rack with a tray underneath.
Pour the red mirror glaze over each frozen dome in one smooth motion, allowing the excess to drip away.
Carefully transfer each glazed dome onto the center of a white plate.
- Make the Red Lace Decorations
The delicate red shapes surrounding the dessert are the decorative element that gives the dish its distinctive appearance.
Melt the white chocolate gently and mix in a small amount of oil-based red coloring.
Transfer it into a piping bag with a very fine opening.
On parchment paper, pipe leaf outlines and delicate branching lines.
Refrigerate until completely set.
Carefully peel the chocolate lace away from the parchment.
Tip: For very thin, delicate decorations, keep the chocolate slightly fluid but not hot. A fine piping tip gives you much better control.
- Final Plating
Arrange the dessert exactly as a fine-dining composition:
Place the glossy red mousse dome in the center.
Add a fresh cherry on top.
Place a small edible white flower beside the cherry.
Insert the red chocolate lace pieces around the mousse.
Arrange the lace pieces at different angles to create a flower/petal effect.
Add a few tiny cherry drops or red gel around the base if desired.
