Ingredients
For the Green Sponge
100 g all-purpose flour
80 g sugar
2 eggs
60 g butter, melted
60 ml milk
½ tsp vanilla
1 tsp baking powder
1–2 tsp matcha powder

Directions
- Make the Green Sponge
Preheat the oven to 175°C (350°F).
Whisk the eggs and sugar until light and fluffy.
Add melted butter, milk and vanilla.
Sift in flour, baking powder, salt and matcha.
Mix gently until smooth.
Spread into a thin baking tray lined with parchment.
Bake for 15–18 minutes.
Cool completely.
Crumble some of the sponge finely. This will become the green moss around the dessert.
- Prepare the Raspberry Filling
Place raspberries, sugar and lemon juice in a saucepan.
Cook over medium heat for 5–7 minutes until the berries soften. Mix the cornstarch with water and add it to the pan.
Cook for another 1–2 minutes until thickened. Cool completely.
For the presentation in your photograph, leave some raspberries partly whole rather than making a completely smooth sauce.
- Make the Green Cream
Soften the gelatin in water for 5 minutes and melt it gently.
Whip the cold cream until soft peaks form.
In another bowl, beat mascarpone, powdered sugar, vanilla and matcha until smooth. Mix in the melted gelatin, then gently fold in the whipped cream.
Pour the mixture into small dome-shaped silicone molds.
Freeze for 3–4 hours, or until completely firm.
- Create the Moss Effect
Mix the fine sponge crumbs with matcha and powdered sugar.
For an especially vibrant green appearance, you can add a tiny amount of natural green food colouring.
The goal is to create very fine crumbs that resemble moss, just like the green coating visible on the dome in your reference picture.
- Make the Chocolate Tree
This is the most distinctive part of the dessert.
Melt the dark chocolate gently.
Place parchment paper on a flat surface.
Transfer the chocolate into a piping bag.
Pipe a thick central trunk.
Pipe many thin, twisting branches coming from the trunk.
Make several smaller branches at the top.
Refrigerate until completely firm.
Carefully peel the chocolate tree away from the parchment.
- Assemble the Dessert
Place a spoonful of raspberry compote in the center of a white plate.
Arrange several fresh raspberries around it.
Sprinkle green sponge “moss” around the berries.
Carefully place the chilled green dome on top.
Cover the dome lightly with the green moss crumbs.
Add small edible flowers around the base.
Insert the chocolate tree carefully into the top of the dome.
Add a few extra green crumbs and flowers around the base.
Notes
- For the fluffy green foliage seen in your picture, use edible green sponge crumbs or very finely crumbled matcha sponge and gently attach them around the upper chocolate branches with a tiny amount of melted white chocolate.
Important: Use only flowers and leaves specifically sold as edible. Don’t use ordinary garden flowers or foliage for plating.
The finished dessert should look like a miniature forest growing from a green moss-covered cake, with the bright raspberries representing forest berries and the chocolate sculpture forming the tree.
