Pistachio Layer
250 ml heavy cream
100 ml whole milk
45 g sugar
60 g pistachio paste
Few drops green food coloring (optional)
4 g gelatin
20 ml cold waterVanilla Layer
250 ml heavy cream
100 ml whole milk
40 g sugar
1 tsp vanilla bean paste
4 g powdered gelatin
20 ml cold waterPistachio Sauce
70 g pistachio paste
80 ml warm milk
20 ml cream
15 g honey
Pinch of saltChocolate Butterfly
120 g dark chocolate
100 g white chocolate
Yellow cocoa butter or yellow chocolate coloringChocolate Flowers
White chocolate
Yellow cocoa butter coloringGarnish
Chopped pistachios
Edible gold flakes
Small edible flowers (optional)

Directions
- Prepare the Vanilla Layer
Bloom the gelatin in cold water for 5 minutes.
Heat cream, milk, sugar and vanilla until steaming but not boiling.
Remove from heat.
Add gelatin and whisk until dissolved.
Pour halfway into moulds.
Refrigerate for 2 hours until just set.
- Prepare Pistachio Layer
Bloom gelatin.
Heat cream, milk and sugar.
Whisk in pistachio paste until smooth.
Add gelatin.
Cool until slightly warm.
Carefully pour over the vanilla layer.
Chill another 4 hours.
- Pistachio Sauce
Warm milk and cream.
Whisk in pistachio paste.
Add honey.
Blend until completely smooth.
Keep slightly warm before plating.
- Chocolate Butterfly Decoration
Print or trace a butterfly template.
Place acetate sheet over the template.
Pipe tempered dark chocolate outlines.
Fill one wing with dark chocolate.
Fill the opposite wing with white chocolate.
Pipe vein details.
Chill for 15 minutes.
Fold the acetate slightly in a V-shape while setting to create natural wing angles.
Join the two wings with melted chocolate.
Pipe a small yellow chocolate body and thin antennae.
- Small Daisy Chocolate flowers
Melt and temper the white chocolate.
Mix in a few drops of yellow oil-based food colouring until evenly coloured.
Fill a silicone daisy flower mould with the chocolate, making sure it reaches all the petals.
Tap the mould gently to remove any air bubbles and scrape off the excess chocolate with a palette knife.
Refrigerate for 10–15 minutes or until completely set.
- How to Decorate (Like the Picture)
Spoon a generous pool of pistachio sauce in the center of a grey plate.
Unmould the chilled panna cotta and place it in the middle of the sauce.
Spoon a little pistachio sauce over the top, allowing it to drip naturally down the sides.
Insert the chocolate butterfly into the top at a slight angle.
Arrange three or four yellow chocolate flowers around the dessert.
Scatter chopped pistachios and a few whole pistachios around the plate.
Sprinkle a few edible gold flakes and pistachio crumbs for an elegant finish.
Notes
- Use 100% pure pistachio paste for the best flavor and natural green color.
Temper the chocolate properly to achieve a glossy butterfly with a crisp snap.
Chill the panna cotta thoroughly before unmoulding for clean, smooth sides.
Warm the pistachio sauce slightly before plating so it flows into elegant drips.
Assemble the butterfly and flowers just before serving to keep them looking pristine.
